What is an ale? In this category of beer, the yeasts ferment on “top” of the fermentation vessels at temperatures of 60o - 75o F. This process takes 7-8 days or less. Ale yeasts produce chemical compounds which are generally “flowery” or “fruity”. Ales come in many varieties, including India Pale Ale’s(IPA’s), red ales, and Hefe-Weizens.

What is a lager? The word lager comes from the German lagern, which means “to store”. The yeasts in lagers are “bottom” fermenting yeasts that work at temperatures of around 34oF. They are sometimes stored at cooler temperatures to mature. Lager yeasts produce fewer by-product characters than ales which allow other tastes to come through, such as hops.
